The 3 modules

Print the syllabus
  1. 01

    Choosing and caring for knives

Cuts are one of the most common injuries in kitchens. Most of them happen with the wrong knife, a blunt knife, or a knife used in a hurry.

  2. 02

    Cutting safely

Good technique keeps your fingers away from the blade and the knife under control.

  3. 03

Carrying knives, the team and first aid

Knife safety is not just about cutting. Many injuries happen when knives are carried, passed or left lying around.

Course content based on the Health and Safety at Work etc. Act 1974, the Provision and Use of Work Equipment Regulations 1998 and guidance from the Health and Safety Executive.
