  1. 01

    Food safety and the law

Everyone who handles food at work has a legal duty to keep it safe. Your employer must make sure you are trained, instructed or supervised in food hygiene to a level that matches your job.

  2. 02

    Food safety hazards and contamination

A hazard is anything in food that could harm the person who eats it. There are four types, and your job is to stop each one getting into food.

  3. 03

Bacteria, food poisoning and temperature control

Most food poisoning is caused by harmful bacteria growing in food kept at the wrong temperature.

  4. 04

Personal hygiene and fitness to work

People are one of the main sources of harmful bacteria and viruses in food.

  5. 05

Cleaning, waste, pest control and premises

A clean kitchen removes the dirt, grease and food debris that bacteria and pests need.

  6. 06

    Food allergens

For someone with a food allergy, a tiny amount of the wrong ingredient can cause a severe reaction or death.

  7. 07

From delivery to sale in a food shop

Food shops, supermarkets, delis, butchers, bakeries and convenience stores have their own risks: deliveries, display cabinets, counters, date codes and recalls.

Course content based on Regulation (EC) No 852/2004 (as retained in UK law) and guidance from the Food Standards Agency and Food Standards Scotland.
